this is Hilary's birthday dinner: bacalla amb samfaina. It's a dish from Barcelona, a Spanish city on the Mediterranean coast, near Provence in France. There are many similarities in Catalan, Provencale, and Italian coastal cuisine - borne of climate, proximity to the sea, and the ancient Romans who one ruled all these areas. The simplicity of this dish is classic. Eggplant, peppers, onions, and tomatoes stewed together, and topped with fried chunks of salt cod. A little parsley also. Hilary declared it her favorite dish.
