Peel & slice up into thick slabs some nice Idaho potatoes. Put them in a bowl of cold water and let set for about an hour to remove some of the starch. Drain and dry. Put in a bowl and mix with a little olive oil, S&P, parsley, etc (basically whatever moves you BE CREATIVE).
