Whence came dogs? The theory is that all the doggy breeds came from wolves. And the theory around that was they descended from wolves gathering around the cavemen's fire looking for scraps. Then they were domesticated as protection, for hunting, and companionship. Wrong! Turns out that all the breeds of dog started in what is now China about 14,000 years ago as food! This is a cooking blog - remember?
In the Tuesday Sept. 8 NYTimes Nicholas Wade posits the theory of dogs as ancient Chinese food. Stands to reason - dogs are still eaten in China.
So get over your squeamishness about certain animals as food - horses, veal, Bambi, caterpillars, rats, and dogs. As the Chinese would say, "Protein is protein".

that's what I love about you, Patrick ... always ready to learn and grow and expand your horizons ... interestingly enough, southern France often uses pastas or rice (whereas the rest of France is usually potatoes)

well, it's more or less a stew, or just the process of braising some kind of meat in liquid (such as wine). It's just the southern French word for this type of braised meat dish
Now all we need is a butcher and a candlestick maker and we can set sail.
