Improvisational Tuscan-Provençal Cookery (and other good stuff to eat)
This is the classic pizza topping of Nice, and is found throughout southern Provence. Just use the dough in Patrick's pizza video, and this topping. Oh! I forgot to mention that the topping also includes a handful of un-pitted Nicoise olives. But there is no cheese!
